The reason God says "in our image" as if someone else was there, is because someone else was...Jesus and the Holy Spirit. Furthermore, who is to say that he hadn't already created others or there are not other beings like him? Genesis only documents our creation. The universe is a big place, but none of this changes the fact that he is our God and he loves us.
